What a great holiday weekend! I hope that you are enjoying yours as well.

We had a family get together this afternoon and there is nothing better than having fresh hamburgers on the bbq.

My secret to a good bbq’d burger is…

1. Use only medium ground beef. It has just the right amount of fat that holds the burger together as well as added taste.

2. In a mixing bowl, add the medium ground beef together with some pepper medley, ketchup and cajun chipotle sauce, one egg yolk, bread crumbs and finely chopped fresh spanish onion.

3. Mix these ingredients very well together and put the bowl and ingredients in the fridge for about 1/2 hour.

4. When taking the bowl out, separate the meat and form each burger into a round ball and place on aluminum foil.

5. Take each ball and form a pattie in your hand and place back on the foil.

6. Make sure that your bbq is hot before placing your burgers on a medium high grill.

7. Mark each burger with a 1/4 turn to the left and only turn once so that all the juices are sealed inside the burger. Never open or press on the burger with your spatula because it will squeeze out those precious juices that add the flavor to your burger.

8. Your burgers should only take about 15-20 minutes.

9. When your burgers are almost done, place them on the upper rack and place a piece of sliced cheddar cheese on each.

10. Always toast the buns until golden brown on the grill and serve immediately with your favorite condiments.
